Herb-Friendly Thumbprint Tea Cookies

Ingredients

  • 3 Cups All-Purpose Flour
  • 1 Cup Almond Flour
  • 2 Tsp Ground Cinnamon
  • 1/2 Tsp Nutmeg
  • 1 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Cup Butter (or Herb-Infused Butter)
  • 1 1/4 Cups Granulated Sugar
  • 2 Large Eggs
  • 20 Drops OOOFlavors Natural Vanilla
  • 1 Cup Strawberry or Raspberry Jam

Directions

  1. Prepare the Dry Ingredients

    • In a large bowl, whisk together the all-purpose flour, almond flour, cinnamon, nutmeg, baking powder, and salt. Set aside.
  2. Cream the Butter and Sugar

    • In a mixing bowl, use an electric mixer to beat the butter (or herb-infused butter) and sugar together until light and fluffy—about 2 minutes.
  3. Add Eggs and Vanilla

    • Beat in the eggs, one at a time, then mix in the OOOFlavors Natural Vanilla until fully incorporated.
  4. Combine Wet and Dry Ingredients

    • Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Avoid overmixing.
  5. Chill the Dough

    • Divide the dough into two portions, wrap each in plastic wrap, and flatten slightly. Chill for at least 2 hours to make it easier to handle.
  6. Preheat and Shape

    • Preheat your oven to 325°F. Line baking sheets with parchment paper.
    • Roll chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  7. Make Thumbprints

    • Use your thumb (or the back of a teaspoon) to press gently into the center of each dough ball, creating a well. Be careful not to press all the way through.
  8. Fill and Bake

    • Spoon a small dollop of jam into each well. Bake for 10–12 minutes, or until the cookies are lightly golden around the edges.
    • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Serve and Enjoy

    • These rich, buttery cookies with a burst of fruity jam are perfect for tea time or as a delightful treat!
