Ingredients
- 3 Cups All-Purpose Flour
- 1 Cup Almond Flour
- 2 Tsp Ground Cinnamon
- 1/2 Tsp Nutmeg
- 1 Tsp Baking Powder
- 1 Tsp Salt
- 1 Cup Butter (or Herb-Infused Butter)
- 1 1/4 Cups Granulated Sugar
- 2 Large Eggs
- 20 Drops OOOFlavors Natural Vanilla
- 1 Cup Strawberry or Raspberry Jam
Directions
-
Prepare the Dry Ingredients
- In a large bowl, whisk together the all-purpose flour, almond flour, cinnamon, nutmeg, baking powder, and salt. Set aside.
-
Cream the Butter and Sugar
- In a mixing bowl, use an electric mixer to beat the butter (or herb-infused butter) and sugar together until light and fluffy—about 2 minutes.
-
Add Eggs and Vanilla
- Beat in the eggs, one at a time, then mix in the OOOFlavors Natural Vanilla until fully incorporated.
-
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Avoid overmixing.
-
Chill the Dough
- Divide the dough into two portions, wrap each in plastic wrap, and flatten slightly. Chill for at least 2 hours to make it easier to handle.
-
Preheat and Shape
- Preheat your oven to 325°F. Line baking sheets with parchment paper.
- Roll chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
-
Make Thumbprints
- Use your thumb (or the back of a teaspoon) to press gently into the center of each dough ball, creating a well. Be careful not to press all the way through.
-
Fill and Bake
- Spoon a small dollop of jam into each well. Bake for 10–12 minutes, or until the cookies are lightly golden around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
-
Serve and Enjoy
- These rich, buttery cookies with a burst of fruity jam are perfect for tea time or as a delightful treat!
