INGREDIENTS
- 1 1/4 cup peanut flour
- 1 tsp baking soda
- 1-2 drops OOOFlavors Sucralose or OOOFlavors Monk Fruit
- 1-2T pumpkin spice seasoning
- Cinnamon & nutmeg to taste
- Pinch or two of sea salt
- 1/4 cup pumpkin purée
- 1/4 cup melted unsalted butter
- 1 egg
- 1 tsp vanilla
- 20 drops OOOFlavors Pumpkin Spice Flavor Concentrate
- Extra sweetener & cinnamon to roll them in before baking
DIRECTIONS
- In a separate bowl mix together all your dry ingredients & set aside.
- In a stand mixer or bowl to blend in, mix together you butter & sweetener till it’s creamy. Now add your pumpkin purée, egg, drops or sf syrup, & vanilla.
- Mix till it’s well incorporated.
- Now add your dry ingredients. There will be a clumpy texture and that’s exactly what you want.
- Taste test if you want to add a little more spices.
- Now, roll into little balls and cover them in your sweetener of choice/cinnamon you have.
- Place on cookie sheet.
- Bake at 350 for 10-12 minutes.
- If you leave them in a little “ball” more like 12 minutes. If you flatten them more like 10 minutes.
Please note: cinnamon makes them look darker
