Blue Raspberry Rock Candy

INGREDIENTS

  • 2 cups granulated sugar
  • 1 cup water
  • ½ cup light corn syrup
  • ½ tsp OOOFlavors Blue Raspberry Candy Flavor
  • Blue food coloring (optional)
  • Confectioners sugar, for dusting
  • 6–8 wooden skewers or lollipop sticks

DIRECTIONS

  1. Prepare the candy sticks:

    • Line a baking sheet with parchment paper and lightly dust it with confectioners sugar to prevent sticking.
    • Insert wooden skewers or lollipop sticks into the parchment paper, spacing them apart to allow the candy to form around them.
  2. Cook the sugar mixture:

    • In a medium saucepan, combine sugar, water, and corn syrup. Stir over medium heat until the sugar is fully dissolved.
  3. Bring to hard-crack stage:

    • Increase the heat and bring the mixture to a boil. Insert a candy thermometer and cook without stirring until the temperature reaches 300°F (hard-crack stage).
  4. Add flavor and color:

    • Remove the saucepan from heat and carefully stir in OOOFlavors Blue Raspberry Candy Flavor and blue food coloring (if desired). Be cautious as the mixture will be extremely hot.
  5. Pour the candy:

    • Carefully pour the hot mixture over the prepared skewers or sticks on the parchment paper. Allow the candy to cool and harden completely, about 30–60 minutes.
  6. Break and finish:

    • Once hardened, gently break the candy into smaller pieces using a mallet or rolling pin, if desired. Dust the candy with additional confectioners sugar to prevent sticking.
  7. Serve and store:

    • Enjoy immediately or store in an airtight container for up to 2 weeks.
